Ingredients:

Grilled Halloumi with Salad

500 g Halloumi cheese, thickly sliced

 

Orange Marinade

½ orange

¼ cup olive oil

2 tbsp white wine

2 tbsp white wine vinegar

½ tbsp sliced fresh chives

½ tbsp chopped fresh marjoram

Salt and pepper

 

SALAD PREPARATION

250 g plum tomatoes

1 small red onion

2 tbsp cider vinegar

1 tsp lemon juice

4 tbsp olive oil

A pinch of ground coriander powder

2 tsp fresh coriander, chopped

Salt and black pepper

Fresh basil leaves, to garnish

 

Preparation Method:

Grilled Halloumi with Salad

To make the orange marinade, remove the rind from the orange with a zester, or grate it finely, then squeeze the juice. Mix the orange rind and juice with all the remaining ingredients in a small bowl, whisk together to combine.

Place the Halloumi in a shallow dish and pour the orange marinade over. Cover and chill for at least 30 minutes.

To make the salad, slice the tomatoes and arrange them on a serving plate. Slice the onion thinly and scatter over the tomatoes.

Whisk together the olive oil, lemon juice, vinegar, coriander powder, and freshly chopped coriander. Add salt and black pepper to taste, then drizzle the dressing over the tomatoes and onions. Cover and chill.

Drain the marinade from the Halloumi. Cook the Halloumi over hot coals for 2 minutes, turning once. Transfer to plates and serve with the salad.
