Grilled Tomato on Soda Bread
Ingredients:
6 tomatoes, thickly sliced
Olive oil for brushing and drizzling
Salt and pepper
4 thick slices of soda bread
Balsamic vinegar drizzling
Shavings of parmesan cheese, to décor
Grilled Tomato on Soda Bread
Preparation Method:
Brush a griddle pan with olive oil and heat. Add the tomato slices and cook them for about 4 minutes, turning once, until softened and slightly cooked. Alternatively, heat the grill to high and line the rack with foil. Grill the tomato slices for 4-6 minutes, turning once, until softened.
Meanwhile, lightly toast the soda bread. Place the tomatoes on top of the toast and drizzle each portion with olive oil and vinegar. Season to taste and serve immediately with a thin shaving of Parmesan cheese.
Cook’s Tip:
Using a griddle pan reduces the amount of oil required for cooking the tomatoes which are useful for those watching their health and weight. It also gives them a delicious barbecued flavor.
