Boneless cooked chicken                                 100 g

(Skinned and finely chopped)

Margarine                                                           25 g

Plain flour                                                            40 g

Egg yolk                                                                1

Milk                                                                      40 g

Button mushrooms, finely chopped                 4

Dried oregano                                                      ½ tsp

Packet batter mix                                               125 g

Salt and black pepper                                         to taste

Thin slices of chicken                                          6

Oil                                                                          for deep frying

Make the Sauce: melt the margarine in saucepan, spray in 25 g flour and mix over on low heat for 1-2 minutes until it becomes straw-colored. Now remove from the heat and slowly stir in the milk and the egg yolk. Return to heat and simmer, keep stirring until thick and smooth.

 

Stir in the chicken, mushrooms and oregano and spice to taste with salt and black pepper. Pour the mixture into a large plate. Spread it out with a knife and leave it to cool for 15-20 minutes.

 

Meanwhile, heat the oven to 110 C and make the batter according to packet instructions.

 

Stretch each of the chicken slices with the back of the knife then cut them in half.

 

Divide the chicken mixture into 12, then roll each piece into a ball and shape it into a roll. Wrap each roll with chicken slices.

 

Spread out the remaining flour on a flat plate and season with salt and pepper. Dip each roll in the flour until evenly coated.

 

Heat the oil in a deep-fat fryer to 190C or until a day old bread cube browns in 50 seconds.

 

Dip the roll one at a time into a batter then drop into the hot oil and deep fry 6 at a time for about 6 minutes until golden brown and crispy.

 

Drain on absorbent paper and keep warm in oven while cooking the second batch. Serve at once.
