Healthy Veggie Soup Recipe

Canned white beans, 2 cups

Vegetable stock, 2 cups

Olive oil, ½ tbsp

Button Mushrooms, 1 cup

Carrot, diced, 2

Celery stalks, diced, 2

Tomato, diced, 2 cups

Onion, diced, 1 large

Zucchini or summer squash, 1

Garlic cloves, minced, 4

Dried thyme, 1 tsp

Cayenne pepper, a pinch

Vegetable broth, 2 cups

Fresh basil, 1 tbsp

Chopped kale, 1 bunch

Salt and ground pepper, to taste


Preparation Method:

Heat cooking oil in a large pot over the medium heat. Add onion, mushrooms, celery, carrot, and zucchini. Cook for 5-6 minutes, stirring occasionally. If vegetables start sticking to the bottom of the pot, pour in just enough vegetable stock to avoid sticking.

Add basil, thyme, garlic, and cayenne and cook for 1 minute, stirring occasionally.

Include kale or Swiss chard and cook, stir often, until the leaves have wilted.

Add beans, vegetable broth and tomatoes, stir to combine well. If the mixture seems thick, add water as per the requirement.

Bring to simmer, reduce heat to the medium-low and continue to simmer for another 20 minutes, stir occasionally.
