Ingredients:

Boneless fish steak, skinned, 750 g

Lemon juice, 2 tbsp

Cooking oil, 1 tbsp

Worcestershire sauce, 1 tbsp

Mixed fresh herbs, chopped, 1 tbsp

Fresh chopped dill or dried dillweed, a pinch

Salt, to taste

Freshly grounded pepper, to taste

Green pepper, deseeded, 1 large

Small tomatoes, halved, 4

Cut the fish into 32 cubes and place on a large plate. In a bowl mix together the lemon juice, oil, Worcestershire sauce, and herbs.  Season well with salt and pepper and pour over the fish. Leave to stand for 5 minutes, turning the cubes of fish in the marinade from time to time.

Put the green pepper in a bowl and cover with boiling water. Leave to stand for 5 minutes. Drain well, then cut into a chunky piece big enough to thread on to skewer.

Heat the grill to moderate. Slide alternate pieces of fish and green pepper on to 8 oiled skewers. Complete each skewer with a halved tomato.

Place the skewers in a grill pan and cook under the grill for 15-20 minutes, turning as necessary and basting with the juices from the pan until the fish is cooked through and lightly browned. The basting is necessary to avoid the fish becoming dry during the cooking.

Prepare 4 portions of creamed potato and spread evenly over a shallow heatproof serving dish. Sprinkle with grated cheese and place under the hot grill until golden brown. Keep hot below the grill pan while cooking the fish. Arrange the fish kebabs on top of the browned potato and garnish with lemon slices and water-cress. Serve with mayonnaise to ketchup or tartar sauce.

 

Variations:

Use raw cucumber instead of blanched green pepper. Add 1 tablespoon dry vermouth to the marinade.
