Ingredients: Italian Cheesy Chicken Macaroni Recipe
Boneless and skinless chicken breast (diced), 350 g
Cooking oil, 1 tbsp
Sausage, diced, 75 g
Onion peeled and chopped, 1
Garlic clove, peeled and chopped, 1
Fresh tomato sauce, 350 g
Can chopped tomato, 400 g
Fresh basil, chopped, 1 tbsp
Fresh basil leaves, for garnish
Salt, to taste
Black pepper, to taste
Macaroni, 350 g
Mozzarella Cheese, drained and chopped, 350 g
Gruyere cheese, grated, 50 g
Parmesan cheese (freshly grated), 50 g
Italian Cheesy Chicken Macaroni Recipe
Preheat the grill just before cooking. Heat the oil in a large frying pan and cook the chicken for 8 minutes or until browned, stirring occasionally. Drain on absorbent kitchen paper and reserve. Add the sausage slices to the frying pan and fry on both sides until crispy. Remove from the pan and reserve.
Add the garlic and onion to the frying pan and cook for 5 minutes or until softened. Stir in the tomato sauce, chopped tomatoes and basil and season to taste with salt and pepper. Bring to the boil, lower the heat and simmer the sauce for 5 minutes.
Meanwhile, bring a large pan of lightly salted water to a rolling boil. Add the macaroni and cook according to the packet instructions.
Drain the macaroni thoroughly, return to the pan and stir in the sauce, chicken, and mozzarella cheese. Spoon the Macaroni into a shallow ovenproof dish.
Sprinkle the fried sausage over the macaroni. Sprinkle over the Gruyere and Parmesan cheeses. Place under the preheated grill and cook for 5-10 minutes or until golden brown; turn the dish occasionally. Garnish the Italian Cheesy Chicken Macaroni Recipe and serve immediately.
