Italian Pasta with Chickpeas was introduced by my Italian friend during my visit to Italy. She introduced me to a dish that her family cooked in the shortest time. This is an easy, quick and healthy pasta dish.


SERVES                 4



Italian Pasta with Chickpeas

Pasta, 300 g or 2 cups

Onion, finely chopped, 1 small

Olive oil, 1 tsp

Garlic clove, crushed, 1

Celery stick, finely chopped, 1

Can chickpeas, drained, 425 g

Tomato puree, 1 cup

Salt, to taste

Black pepper, to taste

Chopped fresh parsley, to garnish


Preparation Method:

Italian Pasta with Chickpeas

Fry the onion, celery and garlic with olive oil in a nonstick frying pan until softened not browned.  Stir in the chickpeas and tomato puree, then cover and simmer for about 15 minutes.

Cook the pasta in a large cooking pan in lightly salted boiling water until just tender. Drain the pasta and toss into the sauce, then season to taste with salt and black pepper.

Sprinkle with chopped fresh parsley then serve hot.
