SERVES                4 persons

Time for preparation and cooking   30 minutes

Ingredients:

Kimami Sewai | Kiwaamee Sevain

100 g vermicelli or sevain, broken into 3 to 4 pieces

¼ cup ghee

2/3 cup sugar

1 cup of water

½ tsp saffron/kesar

2 green cardamoms

½ tsp kewra

2 tbsp almonds, shredded and blanched

Preparation Method:

Kimami Sewai | Kiwaamee Sevain

Take a deep saucepan and put the ghee and heat it. Add vermicelli in the hot ghee and sauté it until it becomes slightly dark. Take another pan to put saffron, water, cardamom, and sugar. Keep the flame medium and dissolve the sugar by stirring continuously.

When you complete the roasting of vermicelli, then include the sugar syrup and kewra water and boil it. Cover the pan well and turn the heat low. Let it cook on low flame completely and observe if the liquid is absorbed completely and vermicelli is cooked thoroughly.

Sevain strands must be cooked well and keep separate like the rice. Put the silver leaves on the sevain for garnishing and add a top layer to these leaves. Serve the guests hot or make it cool in a refrigerator. However, hot Kiwaamee Sevain or Kimami Sewai is more popular and best in taste.
