12 king prawns, unpeeled

½ cup water

1 egg

1 tsp cayenne pepper

Vegetable oil, for deep-frying

Parsley sprig, to garnish

Lemon wedges, to serve


For the Dipping Sauce

2 tbsp soy sauce

Two tbsp dry sherry

2 tbsp clear honey



Preparation Method: King Prawns Recipe

Whisk the water with the egg in a large bowl. Add the flour and cayenne pepper and whisk until smooth.

Carefully peel the prawns, leave the tail sections intact. Make a shallow cut down the back of each prawn then pull out and discard the dark intestinal tract.

To make the dipping sauce, combine soy sauce, honey and dry sherry in a small bowl until well combined.

Heat the oil in a deep fryer, until a cube of stale bread tossed in becomes brown in 1 minute.

Holding the prawns by their tails, dip them into the batter, one at a time, shaking off any excess. Drop the prawns carefully into the heated oil and fry for 2-3 minutes until crisp and golden brown.

Drain King Prawns on the kitchen paper and serve with the dipping sauce and lemon wedges, garnish with parsley.
