Onion (medium thinly chopped)                     1

Yellow pepper (seeded and sliced)                 2

Curry powder                                                    2 tbsp

Plain flour                                                           1 tbsp

Chicken stock                                                     1 cup

Dried apricots                                                    2/3 cup

Wholegrain Mustard                                         2 tbsp

Salt                                                                      to taste

Black pepper                                                      to taste

Trim the excess fat from the meat and fry without fat in a large frying pan until lightly browned. Add the onion and pepper to the pan and stir over on a moderate heat for 5 minutes. Stir in the curry powder and the flour.
