Onion (medium thinly chopped), 1

Yellow pepper (seeded and sliced), 2

Curry powder, 2 tbsp

Plain flour, 1 tbsp

Chicken stock, 1 cup

Dried apricots, 2/3 cup

Wholegrain Mustard, 2 tbsp

Salt, to taste

Black pepper, to taste
