Ingredients:

2 bread rolls
1 medium eggplant
2 tbsp olive oil
Salt to taste
100 g rocket
½ cup, flaked parmesan cheese
Lamb burgers Patties
600 lamb meat, minced
1 medium brown onion, finely chopped
50 g dried chopped tomatoes
2 garlic cloves, crushed
50 g seeded black olives, chopped
50 g stale breadcrumbs
1 egg, lightly beaten
2 tbsp fresh basil, finely chopped
Tomato Salsa Ingredients
1 large red capsicum
1 red onion, finely chopped
3 small tomatoes, finely chopped
1 tsp balsamic vinegar
1 tsp fresh oregano, finely chopped
Preparation Method:
Lamb burgers with Tomato Salsa
Cut eggplant into medium slices, place in a strainer. Mix with salt and stand 30 minutes.
Wash eggplant under the cold water, dry on an absorbent paper and Brush the oil on eggplant pieces. Cook eggplant on the heated oiled barbecue, uncovered until browned both the sides and tender.
Split rolls in half. Place cut side down onto the barbecue. Cook until lightly toasted. Fill with eggplant, lamb patties, rocket leaves, cheese, and tomato salsa.
Burger Patties Preparation
Combine all the ingredients in a medium bowl and mix well by hands. Now shape the mixture into six patties; place them on a tray. Now start cooking patties on the heated oiled grill and barbecue, they uncovered, until they are browned and cooked through.
Tomato Salsa Preparation
Quarter capsicum, remove seeds and remaining membrane. Cook capsicum on the heated oiled grilled, skin-side down, until skin blisters and blackens. Combine capsicum with remaining ingredients in medium bowl.
