Preparation Method:
If required, roughly cut the lamb meat of beef and process the piece in a blender until minced. Divide the minced meat into two equal portions.
For the patties, soak the bulgur wheat for 15 minutes in cold water. Drain then process in a food processor with onion, chili and half the meat, adds salt and black pepper also.
For the stuffing, fry the onion and pine nuts in the oil for 5 minutes. Add all spices and the remaining minced meat and fry gently, breaking up the meat with a wooden spoon, until browned. Stir in the coriander and seasoning.
Turn the patty mixture out on to a work surface and shape it into a cake and cut it into 12 wedges.
Flatten one piece and spoon some stuffing into the center. Bring the edges of the patty up over the stuffing, ensuring that the filling is completely encased.
Heat the oil to a depth of 2 inches in a large frying pan until a few petty crumbs sizzle on the surface.
Place few filled patties into the heated oil and fry for about 5 minutes until golden.
Drain on kitchen paper and keep hot while cooking the remaining patties.
Serve with green salad and yogurt.
