Ingredients:

1.5 kg boneless lamb meat
1 ½ cups yogurt
2 tbsp finely grated lemon rind
¼ cup olive oil
2 garlic cloves, crushed
2 tbsp fresh oregano, finely chopped
½ lemon juice
2 small cucumbers, seeded, finely chopped
2 cloves garlic, crushed, extra
8 large pita bread
4 medium tomatoes, sliced thinly
Preparation Method:

Trim fat from lamb, cut lamb into 3 cm pieces. Combine oil, lemon rind, garlic, lemon juice and oregano in a large bowl. Add lamb pieces and combine well. Cover and refrigerate for 3 hours or overnight.
Combine yogurt, cucumber and extra garlic in a small bowl. Cover; refrigerate for 3 hours or overnight.
Thread lamb pieces onto 16 skewers.
Cook lamb on the heated oiled barbecue, uncovered until browned and cooked as desired.
Serve lamb souvlakia with cucumber yogurt, pita, and tomato.
Cook’s Tip:
If you are using a bamboo skewer, soak in water for at least 1 hour before using, to avoid scorching.
