Lamb Souvlakia | Lamb Souvlakia Skewer

Preparation Time:                            40 minutes (plus marinating time)

Cooking Time:                                   20 minutes

 

Ingredients:

Lamb Souvlakia | Lamb Souvlakia Skewer

 

1.5 kg boneless lamb meat

1 ½ cups yogurt

¼ cup olive oil

2 tbsp finely grated lemon rind

½ lemon juice

2 garlic cloves, crushed

2 tbsp fresh oregano, finely chopped

2 small cucumbers, seeded, finely chopped

2 cloves garlic, crushed, extra

8 large pita breads

4 medium tomatoes, sliced thinly

 

 

Preparation Method:

Trim fat from lamb, cut lamb into 3 cm pieces. Combine oil, lemon rind, garlic, lemon juice and oregano in a large bowl. Add lamb pieces and combine well. Cover and refrigerate for 3 hours or overnight.

 

Combine yogurt, cucumber and extra garlic in a small bowl. Cover; refrigerate for 3 hours or overnight.

 

Thread lamb pieces onto 16 skewers.

 

Cook lamb on heated oiled barbecue, uncovered, until browned and cooked as desired.

 

Serve lamb souvalakia with cucumber yogurt, pita and tomato.

 

 

Cook’s Tip:

If you are using bamboo skewer, soak in water for atleast 1 hour before using, to avoid scorching.
