2 tablespoon of fresh lemon juice
½ cup of softened butter
1 tablespoon of granulated sugar
1 ½ cups of all-purpose flour
1 cup of granulated sugar
½ teaspoon of salt

2 large eggs
1 teaspoon of baking powder
½ cup of milk
1 cup of powdered sugar

 

Preparation Method:

Whisk your softened butter at average speed using electric blender until it becomes creamy. Gently add one cup of granulated sugar, ensure you whisk until the mixture is light and fluffy. Add your large eggs putting in one at a time stirring effectively to ensure the mixture is blended before adding another.

 

Beat together your flour, salt, and baking powder and add them to the mixture of butter and or with milk in the alternative, stirring at low speed to get even blended mixture, starting and ending with flour mixture. Beat in 1 tablespoon of lemon rind. Spoon batter into your well-greased and floured loaf pan of 8- x 4”.

 

Bake your bread at 350 degrees for one hour or continue to bake until a wooden pick you inserted at the center comes out without stain. Allow the bread to cool for 10 minutes in a pan. Bring the bread out from the pan and completely cool it on a wire rack.

 

Beat powdered sugar together with lemon juice until you get a smooth mixture; spoon your mixture evenly on top of your bread and allow excess to drip down the side of the bread. Then beat the remaining 1 tablespoon of lemon rind and 1 tablespoon of granulated sugar together and drizzle on top of your bread.
