Stuffed Zucchini or Lemony Stuffed Courgette is an easy to make appetizer recipe. It is delicious and you will be happy that you did it.
Ingredients:
Lemony Stuffed Courgettes | Lemony Stuffed Zucchini
4 Courgettes, about 175g,
Sunflower oil, 1 tsp
1 Garlic clove, crushed,
½ Lemon Juice and finely grated rind,
1 ½ cups Cooked long grain rice,
Cherry tomatoes, halved, 175 g
Cashew nuts, toasted, 2 tbsp
Salt and black pepper, to taste
Thyme sprigs, to garnish
Preparation Method

Preheat the oven to 200C. Half the courgettes lengthways and use the teaspoon to scoop out the centers. Blanch the shells in the boiling water for a minute then drain well.
Chop the courgette flesh finely and place in a saucepan with the oil and garlic. Stir over a moderate heat until softened but not browned.
Stir in the lemon grass, lemon rind and juice, rice, tomatoes, and cashew nuts. Season well and spoon into the courgette shells. Place the shells in a baking tin and cover with foil.
Bake for 25-30 minutes or until the courgettes are tender then serve hot, garnished with thyme sprigs.
