Meat and Potato Soup Recipe

Potato diced, 750 grams

Vegetable oil, 1 tablespoon

Large Onion, 1 finely chopped

Chicken Stock, 600 ml

Corn beef, 200 grams (diced)

Sweet corn (drained), 225 grams

Ground Black Pepper, as desired

Salt, to taste

Chopped Parsley, 1 tablespoon


Preparation Method:

Meat and Potato Soup Recipe

Heat the oil in a large saucepan, add the onion and cook softly for 2-3 minutes. Add potatoes and cook for a further 2 minutes, keeps stirring with a wooden spoon.

Stir the chicken stock into the pan, season lightly with salt and pepper and bring to boil. Now lower the heat, cover and simmer for 10 minutes.

Add the corned beef and sweet corn, bring back to the boil, then lower the heat again and simmer for a further 10 minutes.

Stir in the parsley in Meat and Potato Soup, taste and adjust seasoning, then pour into a warmed soup bowl. Serve warm!
