Children will love this Tomato soup, especially if you use fancy shapes of pasta such as alphabets or animals shapes.

 

Ingredients:

Mediterranean Tomato Soup Recipe

Plum tomatoes, 675 g

Onion, 1 medium

Garlic clove, 1

Celery stick, 1

Olive oil, 1 tbsp

Chicken stock, 450 ml

Tomatoes puree, 2 tbsp

Small pasta in shapes, 50 g

Salt and pepper, to taste

Parsley or fresh coriander, to garnish

 

Preparation Method:

Mediterranean Tomato Soup Recipe

Place the tomatoes, onion, celery, and garlic in a pan with the oil. Cover and cook over a low heat for 40-45 minutes, shaking the pan occasionally until very soft.

Spoon the vegetables into a food processor or a blender and process until smooth. Press through a sieve then return to pan.

Stir in the stock and tomato puree and bring to the boil. Add the pasta and simmer gently for about 8 minutes or until pasta is tender. Add salt and pepper to taste then sprinkle with parsley or coriander leaves and serve Mediterranean Tomato Soup hot.
