Mexican Casserole Recipe

Brown rice, 2 cups

Black beans, 1 can

Cherry tomatoes, 10

Avocado, ¼

Garlic clove, 1

Small onion, ¼ part

Jalapeno pepper, 1

Lime juice, 1

Cilantro, 4 sprigs


Preparation Method:

Prepare 2 cups of brown rice.

Heat 1 can of black beans with one crushed garlic clove on the stove.

Add cherry tomatoes, onion, cilantro, jalapeno pepper, and lime juice to small blender and pulse to make salsa.

In a casserole, spoon a layer of brown rice on the bottom, then beans and then salsa.

Add to the top with sliced avocado just before serving or squeeze lime on top to preserve their green color.
