Milky Sheer Khurma Recipe

2.5 cups full cream milk

¼ cup sugar

¼ cup best quality vermicelli

1 tbsp rose water

1 tbsp butter

A pinch of cardamom powder

Dry fruits & nuts

2 tbsp dates; finely chopped

2 tbsp raisins

1/3 cup of almond, cashews, and pistachios, chopped

Start boiling full cream milk and let it boiled and reduced in the half of total volume. Chop up all the dry fruits and nuts. Add the dates in hot milk and put aside. Heat the butter in a small wok and add raisins and nuts to fry and turn them slightly brown and set aside.

Take the same pan and roast the vermicelli until golden brown. Put the half of milk in roasted vermicelli and let it cook well. Add sugar, cardamom powder when vermicelli turns softer and stir all ingredients quickly.

Add remaining milk to cook the vermicelli on low heat. Once it becomes thick and then adds roasted nuts, rose water and dates. Stir well and cook for 2 minutes only. Check the thickness of Milky Sheer Khurma and remove from the heat. Serve sweet dish to the guests either hot or cool.
