Mixed Beans Soup is a really hearty soup, filled with color, flavor, and goodness, which may be adapted to any vegetables that you like to have.

Ingredients:

Mixed Beans Soup Recipe

450g mixed canned beans drained and rinsed

1 tbsp vegetable oil

1 carrot, diced

One red onion, halved and sliced

1 leek, sliced

1 fresh green chili, sliced

100g potato, diced

3 garlic cloves, crushed

1 tsp chili powder

1 tsp ground coriander

1litre fresh vegetable stock

Salt and pepper

2tbsp chopped fresh coriander, to garnish

 

Preparation Method:

Heat the oil in a large heavy-based saucepan and add the onion, carrot, potatoes, and leek. Cook and stirring occasionally for about 2 minutes until the vegetables have slightly softened.

Add the garlic and chili and cook for a further 1 minute

Stir in the ground coriander, chili powder, and vegetable stock.

Bring the soup to the boil, reduce the heat and cook for 20 minutes or until the vegetables are tender.

Stir in the beans, season with salt and black pepper to taste and cook, stirring occasionally, for a further 10 minutes.

Shift the mixed beans soup into bowls, garnish with chopped coriander and serve.
