Mixed Chunky Vegetable Recipe is an easy side dish that can be made in a few minutes. It has nutrition value with a wonderful taste. You can present this with main course dishes.

 

Ingredients:

Carrot, peeled, 1 large

Turnip, peeled, 1

Capsicum, 2

Cauliflower, 1 small

Courgettes, peeled, 2 medium

Tomatoes, quartered, 2

Garlic cloves, crushed, 2

Red onion, peeled, 1 large

Butter, 1 tbsp

Olive oil, 1 tbsp

Dried mix herbs, 1 tsp

Salt, to taste

Freshly grounded black pepper, to taste

Cut carrots and courgettes on the diagonal into fairly thick pieces. Cut the turnips, capsicums, and cauliflower into medium-sized cubes and onion into wedges.

Boil the carrots and turnips in salted water until tender but firm.

Heat the oil and butter over the medium heat in a wok; fry garlic for a minute then add other vegetables and stir-fry for 5 minutes. Add onion and fry another 1 minute and then add tomatoes. Season with mixed herbs, salt, and black pepper and gently stir-fry for another minute.

Serve with roasted mutton or beef or fried chicken.
