Bell peppers are available throughout the year but they are best in late summer when you can get fresh from the nearest farmhouse.  Bell peppers are overloaded with assorted vitamins and minerals; they are extremely rich in vitamin C. This mixed bell pepper dish can be enhanced by adding green or black olives.

Preparation and Cooking Time   40 minutes

 

Ingredients:

2 red peppers

2 yellow peppers

1 garlic clove

2 green peppers

1 onion

2 large beefsteak tomatoes

5 tbsp olive oil

1 bay leaf

2 sprigs thyme

Salt and black pepper

1 tbsp chopped parsley

Preparation Method:

Halve, core and de-seed the peppers. Slice the flesh into thin strips. Finely dice the garlic.

Cut a cross on the top of the tomatoes. Wash and place in a microwave dish dripping wet. Put in the microwave for 3-4 minutes at 600 watts. Cool in cold water, peel and halve. Remove the stalk ends and seeds.

Place all the vegetables in a large microwave dish. Do not pile too high. Pour over the oil. Add the herbs and season with salt and pepper. Cover and cook for 18-20 minutes at 600 watts, stirring from time to time.

Remove the herbs and sprinkle with chopped parsley.

Mixed Bell Peppers recipe could be an accompaniment to boiled beef or steak.
