Give the striking twist to the usual roast chicken recipe in Moroccan style. It is a fantastically flavorful chicken roast recipe that I ate several times Moroccan Style Roast Chicken during my stay in Rabat, Morocco.

 

SERVES                 6-8

 

Ingredients:

Moroccan Style Roast Chicken | Chicken Recipe

Chicken whole, 2×500 g

Cooked long grain rice, 1 ½ cup

Onion, finely chopped, 1 small

Lemon, grated rind and juice, 1

Chopped mint, 2 tbsp

Dried apricots, 3 tbsp

Yogurt, 2 tbsp

Turmeric powder, 2 Tsp

Cumin powder, 2 Tsp

Salt, to taste

Black pepper powder, to taste

Lemon slices, to garnish

Mint sprigs, to garnish

 

Preparation Method:

Preheat the oven to 200° C. Combine the rice, apricots, lemon rind, and mint. Add in the half portion each of the yogurt, lemon juice, cumin, turmeric, salt, and pepper.

Stuff the chicken with the rice mixture at the neck. Additional stuffing can be served separately. Place the stuffed chicken on a rack in a roasting plate.

Combine the remaining lemon juice, turmeric, yogurt, and cumin then brush this mixture over the Chicken. Cover the chicken loosely with aluminum foil and cook for 30 minutes in an oven.

Remove the aluminum foil and roast for another 15-20 minutes or until golden brown. It should not be pink when pierced.

Cut the chicken in portions with a sharp knife and served with the boiled rice or boiled or fried potatoes. Garnish Moroccan –Style Roast Chicken with lemon slices and mint.
