Mozzarella Frittata with herby Salad

For Mozzarella Frittata

 

Ingredients

 

Eggs, beaten                                                      7

Mozzarella Cheese                                          300 g

Salt                                                                     to taste

Spring onion, Fine chopped                            2

Olive oil                                                              2 tbsp

Crusty Bread                                                     to serve

 

 

For Herby Salad

 

Ripe but firm tomatoes                                 6

Basil leaves                                                      2 tbsp

Olive oil                                                            2 tbsp

Lemon juice                                                     1 tbsp

Caster sugar                                                    1 tbsp

Freshly ground black pepper                        to taste

 

 

 

Preparation Method: 

Mozzarella Frittata with herby Salad

 

To Make the Frittata

 

Preheat the grill to high heat before start cook. Place the eggs in a bigger bowl with required salt and whisk. Grate the mozzarella cheese and stir into the egg with finely chopped spring onions.

 

Heat the oil in a large non stock frying pan and pour in the egg mixture, stirring with a wooden spoon to spread the mixture evenly over the pan.

 

Cook for 6-8 minutes until the frittata is golden brown and firm on the underside. Place the frying pan below the preheated grill and keep remain for about 4-5 minutes or until the frittata is golden brown. Shift the frittata on to a serving plate, cut into 6 large wedges and serve immediately with the tomato and basil salad and warm crusty bread.
