For Mozzarella Frittata
Ingredients
Eggs, beaten, 7
Mozzarella Cheese, 300 g
Salt, to taste
Spring onion, Fine chopped, 2
Olive oil, 2 tbsp
Crusty Bread, to serve
For Herb Salad
Ripe but firm tomatoes, 6
Basil leaves, 2 tbsp
Olive oil, 2 tbsp
Lemon juice, 1 tbsp
Caster sugar, 1 tbsp
Freshly ground black pepper, to taste

To Make the Frittata
Preheat the grill to high heat before start cook. Place the eggs in a bigger bowl with required salt and whisk. Grate the mozzarella cheese and stir into the egg with finely chopped spring onions.
Heat the oil in a large nonstock frying pan and pour in the egg mixture, stirring with a wooden spoon to spread the mixture evenly over the pan.
Cook for 6-8 minutes until the frittata is golden brown and firm on the underside. Place the frying pan below the preheated grill and keep remain for about 4-5 minutes or until the frittata is golden brown. Shift the frittata on to a serving plate, cut into 6 large wedges and serve immediately with the tomato and basil salad and warm crusty bread.
