Mozzarella Cheese, 125 g

Thin white bread, 8 slices

Egg beat, 2 medium

Salt, to taste

Freshly ground black pepper, to taste

Olive oil, 300 ml


For the Cranberry Relish

Cranberries, 125 g

Fresh orange juice, 2 tbsp

Orange rind, grated, 1 small

Light brown sugar, 50 g

Slice the mozzarella thinly, remove the crust from the bread and make sandwiches with the bread and cheese. Cut into 2-inch squares and squash them quite flat. Season the eggs with salt and pepper, then soak the bread in the seasoned egg for I minute on each side until well coated.

Heat the oil to 190 C and deep-fry the bread for 1-2 minutes or until they are crisp and golden brown. Keep on absorbent kitchen paper to drain and keep warm while the cranberry relish is prepared.

Place the cranberries, orange juice, rind, and sugar into a small saucepan and add 5 tablespoons of water. Bring to the boil, then simmer for 10 minutes or until the cranberries have popped. Sweeten with a little more sugar if required.
