Multi Layered Vegetarian Rice Recipe is a combination of colors that are made with natural vegetable and rice as ingredients. Normally, mutton biriyani, chicken biriyani is a traditional meal in Indian cusines or Pakistani cuisines.

The Vegetarian Rice version of the biriyani is very famous among vegetarian food lover all over India and another part of the world.  For Multi-layered Vegetarian Rice Recipe, we are going to make little variation but the flavors will be the same as other classic biryani.

  • 2 cups of rice, well washed as well as pre-soaked

The Spinach/ Palak Layer Ingredient

  • 200 grams of boiled and pureed spinach
  • 1 tablespoon of boiled and pureed kasoor with spinach
  • 2 tablespoon of ghee
  • 3 to 4 black elaichi daana
  • ½ stick cinnamon
  • 1 teaspoon of jeera
  • ½ tablespoon of ginger garlic paste
  • 2 tablespoon of onion paste
  • 1 cup of pureed tomato
  • Pinch of salt
  • Pinch of garam masala.

Tomato Paneer Layer Ingredients

  • 1 Tablespoon of ghee
  • 1 teaspoon of jeera
  • ½ Tablespoon of ginger garlic paste
  • 1 ½ cups of pureed tomato
  • 1 cup of cubed paneer
  • Pinch of salt
  • 1 teaspoon of sugar
  • ½ teaspoon of garam masala
  • ¼ cup of milk.

 

Method for Preparation:

For Preparation of Aloo Lachchas

  1. Grate your potatoes and immerse them in salty water.
  2. Remove the water and fry the potatoes using deep frying method till it changes golden brown.
  3. Drain the potatoes using absorbent paper.

 

Rice Preparation

Boil rice and add a little salt. Remove the excess water in it.

 

Spinach/ Palak Layer Preparation

  1. Inside pan add elaichi dana, ghee, jeera, cinnamon, and ginger garlic paste. Then sauté.
  2. Add in onion paste and sauté until it changes golden brown.
  3. Put in tomato puree. Put garam masala as well as salt. Continue to cook until oil starts coming out of the sides
  4. Put in already boiled puree spinach-kasoori methi.
  5. Cook the mixture for 15 to 20 minutes time using medium heat.

 

Tomato Paneer Preparation

  1. Add jeera, ghee, and ginger-garlic paste in a pan.
  2. Put in tomato puree and salt as well as sugar. Continue to cook until oil starts coming out from the sides.
  3. Put in Paneer cubes and milk and allow cooking for another 2 minutes using low heat.

Method for Dishing

  1. Layer boiled rice in a baking dish.
  2. Put in tomato paneer.
  3. Continue to layer in the elements until you have a full baking dish
  4. Now add aloo lachchas and bake the mixture for about 7 to 8 minutes with 150C flame.
  5. Serve Multi layered Vegetarian Rice Recipe with a bowl of curd.
