Ingredients:
Mutton Cubes Kebab with Peanut Dip
Mutton, 350 grams
(Trimmed and cut into a 1-inch cube),
Crunchy peanut butter, 3 tablespoon
Desiccated coconut, 25 grams
Water, 150 ml
Salt, to taste
Black pepper, to taste
Coriander leaves, to garnish
Marinade
Vegetable oil, 2 tablespoon
Curry paste, 2 tablespoon
Lemon Juice, 2 tablespoon
Ground coriander, ½ teaspoon
Ground turmeric, ¼ teaspoon
Preparation Method:
Mutton Cubes Kebab with Peanut Dip
Make the marinade: blend the marinade ingredients in a bowl.
Add the mutton cubes and coat thoroughly in the marinade. Cover and leave to stand for 30 minutes.
Heat the grill to moderate.
Remove the mutton cubes from the marinade with a slotted spoon. Reserve the marinade. Thread the mutton cubes on to each on 12 wooden sticks.
Grill the mutton cube kebabs for 10 minutes, turning occasionally until cooked.
Meanwhile, pour the reserved marinade into a saucepan and add peanut butter, coconut, and water. Season with salt and pepper and heat through gently, stirring constantly until well mixed.
Arrange the Mutton Cubes Kebabs on a warmed serving plate and garnish with coriander. Serve at once with the dip handed separately in a warmed bowl. (See serving idea)
