Nankhatai is an authentic Indian eggless sweet and savory cookie that is served as an evening snack or during tea time.  This is an easy snack recipe that can be easily prepared at home. Nankhatais is also a favorite item for the Diwali festival and other special occasions.

Ingredients:

4 cups of wheat flour (Atta)

6 tbsp fine flour (Maida)

½ cup ghee

1 cup of sugar

2 cardamoms

14 Pistachios

Baking powder, 1 pinch

 

Preparation Method:

Preheat oven at 200°C.

Grind sugar and cardamom in a grinder, make powder and keep in a bowl.

By using the grinder, coarsely crush the pistachios nut and keep aside for garnishing.

Combine wheat flour, fine flour, cardamom and sugar powder in a large bowl. Aldo, add baking powder and combine well.

Now include ghee and knead well and make the flexible dough. No need to add water

Now, you make small equal sized balls and later flatten all of them slightly

Take a baking tray, grease it with little ghee and dust with flour modestly.

Keep the ready balls on a tray and keep in a cross pattern on the top. Now garnish with crushed pistachios.

Place the tray in a preheated oven. Bake until all the nankhatais begin changing color to the golden brown.

Take out from the oven and allow them to cool.

Keep the ready nankhatais in the airtight container.

Serve these nankhatais as a snack.
