Ingredients: Oat Crusted Chicken Recipe
Chicken thighs or drumsticks, skinned 8
Fresh Cheese, low fat ½ cup
Skimmed milk 3 tbsp
English Mustard 2 tsp
Rolled oats ½ cup
Wholegrain mustard 1 tsp
Thyme or parsley leaves 3 tbsp
Salt to taste
Black pepper to taste

Preheat the oven to 200C. Mix milk with English mustard.
Mix the oats with 2 tbsp Thyme or parsley leaves and the seasoning on a plate. Brush the chicken with the milk and press into the oats to coat evenly.
Place the chicken on a baking sheet and back for about 40 minutes until the juices run clear. It should not look pink when pierced through the thickest part.
Meanwhile, mix together with the fresh white cheese, mustard and remaining Thyme or parsley leaves and seasoning then serve with the chicken. Garnish with the fresh mint leaves and serve Oat Crusted Chicken hot or cold.
