This delicious omelet recipe is perfect for a quick lunch or a picnic. Using beans in the omelet is a very old tradition in the Catalonia region, northeastern Spain.

8 eggs

2 tbsp olive oil

1 tbsp sesame oil

400g soft white beans

1 onion, chopped

1 small red pepper, seeded and diced

2 celery sticks, chopped

3 tbsp sesame seeds

Salt and freshly ground black pepper

Green salad, to serve

Heat the olive and sesame oils in a medium frying pan. Add the onion, pepper, and celery and cook to soften without coloring.

Add the white beans and continue to cook for several minutes to heat through.

In a small bowl, beat the eggs with a fork, season with salt and black pepper and pour over the ingredients in the pan.

Stir the egg mixture with a flat wooden spoon until it begins to stiffen, then allow to firm over a low heat for 6-8 minutes.

Preheat a moderate grill. Sprinkle the omelet with sesame seeds and brown evenly under the grill.

Cut the omelet with beans into thick wedges and serve warm with green salad.
