A very delicious seasonal cake recipe that brings out the best of a sponge coupled with the fantastic orange mousse prepared using the best oranges so readily available in the season. The same can also be tried with other available citrus fruit, however since oranges are in peak season, I tried Orange Mousse Cake Recipe by Chef Shireen Anwer and it was a tasty blast.

 

Ingredients:

Orange Mousse Cake Recipe

For Sponge Cake

2 Oz Flour
2 Oz castor sugar
Two cups oranges, sliced
2 eggs
1 tsp vanilla essence
½ tsp baking powder

 

Ingredients for Filling

3 eggs, whites, and yolks separated
5 Oz sugar
½ cup milk
1 ½ cup whipped fresh cream
½ cup chopped oranges
2 tbsp gelatin powder
Few drops orange color

Orange Mousse Cake Recipe

Prepare the sponge cake using the usual recipe in an 8” pan and keep aside to cool. In a saucepan mix together the egg yolks, 2 oz sugar, and milk and cook on low heat until the mixture thickens. Once the mixture is cool add in the chopped oranges and food color. In a cup dissolve the gelatin powder in water and add in the mixture.

In a separate bowl beat the egg whites until stiff and slowly fold in the remaining sugar. Mix it with the whipped cream and pour on top of the sponge cake, covering it entirely and leaving it aside to cool for at least 2 hours. Your Orange Mousse Cake is ready to serve. Garnish with orange pieces and swirls of fresh cream.
