Ingredients: Pan Fried Mediterranean Lamb Recipe


Lean Lamb cutlets                                            8

Onion, thinly sliced                                           1 (medium)

Red pepper (seeded and sliced)                      2

Tomatoes                                                            400 g

Garlic clove, crushed                                         1

Fresh basil leaves                                              3 tbsp

Black olives (chopped)                                      2 tbsp

Salt                                                                       to taste

Black pepper                                                       to taste




Preparation Method: Pan Fried Mediterranean Lamb Recipe


Trim the excess fat from the lamb, then fry without fat in a non-stick pan until golden brown.


Add the onion and peppers to the pan. Cook, keep stirring for few minutes to soften, the add the tomatoes, garlic and basil.


Cover and simmer for 20 minutes or until the lamb is tender. Stir in the olives, season and serve hot with pasta.
