Pasta tastes perfect in this lively salad with cherry tomato, red onion, dressed with red wine vinegar, olive oil, lemon juice and basil.
Ingredients: Pasta Salad Recipe
1 yellow bell pepper, halved, cored and deseeded
2 small courgettes, sliced
1 red onion, thinly sliced125g cherry tomatoes, halved
Fresh basil leaves, sliced
Fresh basil leaves sprigs, to garnish
4 tbsp olive oil
2 tsp red wine vinegar
2 tsp lemon juice
1 tsp Dijon mustard
½ tsp caster sugar
Salt and pepper

Cook the pasta in the lightly salted boiling water for about 10 minutes or until just tender.
Meanwhile place the bell pepper halves, skin-side uppermost, under a preheated grill until they just begin to char. Leave them to cool then peel and slice then into strips.
Cook the courgettes in a small amount of boiling water little salted water for 3-4 minutes, until cooked, yet still crunchy. Drain and refresh under cold running water t cool fast.
To make the dressing, mix together the olive oil, lemon juice, red wine vinegar, mustard and sugar. Season them well with salt and black pepper. Add the basil leaves also.
Drain the pasta well and tip it into a large serving bowl. Add the dressing and toss well. Add the pepper, courgettes, onion and cherry tomatoes and combine them together. Cover and leave at room temperature for about 30 minutes to allow the flavors to develop.
Garnish Pasta salad with basil leaves and serve.
