A great and quick way to prepare BBQ pesto fish kebabs recipe for a healthy mid-week meal.

Preparation Time: 20 minutes (plus marinating time)

Cooking Time: 15 minutes

 

Ingredients:

600g firm white fish fillets

1 tbsp bottled pesto

½ cup parsley, finely chopped

1/3 cup drained baby capers

½ small savoy cabbage, finely shredded

1 tsp finely grated lemon rind

½ cup finely chopped fresh mint

 

Preparation Method:

Cut fish into 2 cm cubes; combine with pesto and one tbsp chopped parsley in a medium bowl. Cover and refrigerate I hour.

Thread fish onto eight skewers.

Cook fish on the heated oiled barbecue, uncovered, until browned and just cooked through. Cover to keep warm.

Cook cabbage on heated barbecue plate until tender. Stir in the remaining parsley, capers, lemon rind, and mint.

Serve Pesto Fish Kebabs with cabbage mixture.
