Potato Broth Recipe is a great way to use a potato. This recipe is replacing water with beef stock to make it healthier. This vegetable recipe is a classic dish and very easy to make!

Ingredients:

750g potatoes

2 large carrots

¼ celeriac

1 leek

1 bay leaf

15g butter

1-liter beef stock

Marjoram

Salt

1 tbsp chopped parsley

Wash the potatoes, carrots, and celeriac. Peel the potatoes and celeriac. Chop the potatoes and dice the carrot and celeriac finely. Cut off the roots and dark green parts of the leek and slice the remaining parts and wash thoroughly.

Put all the vegetables into a large saucepan and add in the beef stock. Add marjoram to taste and bay leaf. Bring to the boil then simmer, covered for 20-25 minutes.  The potatoes should absorb all the stock and all the vegetable tendered.

Stir the butter and parsley into the potato broth before serving.

You can serve Potato Broth alone as a light veggie meal or as an accompaniment to beef and a sauce.
