Ingredients:
Potato Fritters with Mustard Dip
Potato, about 450g
1 egg
100g almonds
3 tbsp Parmesan cheese, freshly grated
Lemon juice
3 tbsp fresh parsley, chopped
Oil for deep-frying
Salt and black pepper
Sea salt flakes, to garnish
For Mustard Dip
150 ml soured cream
2 tbsp wholegrain mustard
Preparation Method:
Potato Fritters with Mustard Dip
Beat the egg well and pour into a shallow dish. Mix together the grated Parmesan, almonds, and parsley in a separate dish. Now season it with salt and a good quantity of black pepper. Set aside.
Peel and cut the potatoes into baton about ½ inch wide and 2 inches long. Drop them immediately into a bowl of water with little lemon juice added to prevent discoloration.
Heat the oil to 180° C. Drain and pat dry half the potatoes batons. Dip them into the beaten egg then into the grounded almond mixture, ensuring that pieces are coated completely and evenly.
Deep fry the potato fritters in batches for 2-3 minutes until golden. Drain on kitchen paper. Keep warm while you prepare the remaining fritters.
Make the mustard dip. Combine the soured cream, mustard and salt to taste. Keep into a serving bowl. Sprinkle the potato fritters with sea salt flakes.
Variation:

You can use Celeriac to replace potatoes.
