Self raising flour 125 g
Salt to taste
Margarine or butter 50 g
Mashed tomato, cold 250 g
Vegetable oil for greasing

Onion, sliced 1 large
Red Pepper, deseeded, sliced 1
Button mushroom, sliced 125 g
Oregano 1 pinch
Malt vinegar 2 tbsp
Tomato puree 1 tbsp
Cheddar cheese, sliced 175 g

Heat the oven to 230 C and oil a large baking sheet
Make the base
Shift the flour and salt into a large bowl. Add the margarine and rub it in with your fingertips until the mixture resembles breadcrumbs then add the mashed potatoes and knead the mixture lightly until smooth.
Press the dough into a 10 inch round and refrigerate.
Meanwhile, make the Topping
Heat the oil in a frying pan; add onion, red pepper and fry gently for 5 minutes or until the onion is soft and lightly colored. Remove the pan from the heat and stir in the mushrooms, oregano, vinegar and salt and pepper to taste.
Place the potato base on a baking sheet and spread the tomato puree over it then top with the onion mixture. Arrange the cheese slices over the top.
Bake in the oven for 25-30 minutes or until the base is firm and cheese is golden brown.
