Potatoes and Cauliflower dish or Aloo Gobi Recipe is very simple to make and can be eaten as a main meal. In India and Pakistan, it is called Aloo Gobi and this dish is eaten with Indian bread (Roti) or boiled rice. It is served with raita such as cucumber and yogurt or fresh mint relish.

500 g potatoes

1 medium cauliflower, cut into small florets

6 tbsp cooking oil

2 tsp cumin grounded

2 tsp ground coriander

½ tsp turmeric powder

½ tsp cayenne pepper

1 ½ cumin seeds

2 garlic cloves, crushed

Salt

2 tbsp fresh coriander leaves, chopped

Cook the potatoes in their skins in boiling water for about 20 minutes, until just tender. Drain and let them cool. Now peel and cut into small cubes.

Heat 3 tablespoons of the cooking oil in a frying pan. When the oil is hot, add the ground cumin, turmeric, coriander, cayenne pepper, and chili. Let all the spices sizzle for a few seconds.

Add the cauliflower florets and about 6 tbsp water. Cook over the medium heat, stirring continuously for 6-8 minutes. Add the potatoes and stir-fry for 2-3 minutes. Add salt and then remove from the heat.

Heat the leftover cooking oil in a frying pan. When the oil is hot, add the garlic and cumin seeds and cook until lightly browned. Pour the mixture over the vegetables.

Sprinkle with the freshly chopped coriander and serve at once.
