Ingredients:

Prawns with Avocado Mash | Barbecue Prawn Recipe

1 kg large uncooked prawns

2 cloves garlic, crushed

½ cup chopped fresh basil

1 tbsp finely grated lime rind

 

Avocado Mash

2 medium Avocados (500g)

2 medium Tomatoes (380 g), seeded, finely chopped

Two tbsp lime juice

1 small red onion (100g), finely chopped

2 tsp ground cumin

2 tbsp fresh basil, finely chopped

Two fresh red chilies, seeded, finely chopped

 

Preparation Method:

Shell and devein the prawns, leaving tails intact. Combine prawn, basil, garlic and lime rind in a large bowl. Cover, refrigerate 3 hours or overnight.

Cook prawns on the heated oiled barbecue, uncovered until browned from both the sides and changes in color.

Serve barbecue Prawns with avocado mash and lime wedges, if desired.

 

Avocado Mash

Mash flesh on one avocado in a small bowl and make it smooth. Coarsely chop flesh of the second avocado. Add to the bowl of mashed avocado with remaining ingredients; combine well.
