Quick Portuguese Lamb Recipe is a most delicious and a must dish at each and every Portuguese dining table at lunch on the Easter Sunday. However, this Lamb dish is made on for other family and friends get together.

 

Ingredients:

Lamb fillet, 750 grams

Grapefruit, 1 large

Ground coriander, 2 tablespoon

Salt, to taste

Black pepper, to taste

Olive oil, 3 tablespoons

Dry white wine, 4 tablespoon

Red pepper, 2

 

Preparation Method:

Grate the zest from the grapefruit and reserve. Remove all the remaining rind and pith. Then divide the flesh into segments cutting away all membranes.

 

Put the strips of lamb in a bowl, sprinkle with the ground coriander, the reserved grapefruit grated zest, salt, and pepper to taste and turn the meat over until thoroughly coated.

 

Heat the oil in a frying pan until very hot. Add the meat and fry briskly turning from time to time until evenly browned on all sides.

Pass the juice from a quarter of the grapefruit segments through a sieve. Add to the frying pan and stir in wine. Fry for 3-4 minutes until the meat is tender, keep stirring all the time.

 

Transfer the meat to a warmed serving dish with a slotted spoon. Keep oven in the lowest hot oven.

 

Bring the liquid in the pan to the boil and keep boiling until reduced slightly. Lower the heat and add the remaining grapefruit segments and heat through.

 

Remove the grapefruit segments from the pan with a slotted spoon and reserve. Pour the pan juices over the meat then garnish with the reserved grapefruit segments. Serve at once.
