1 tbsp lemon juice

Rinse the raspberries with fresh cool water and keep them in a large deep bowl along with the cinnamon and water. Cover the microwave proof bowl with the cling film and pierce the several times with the knife tip.
Cook the raspberries on high for 3 minutes. Roughly mash the berries with a masher or a fork and allow them to stand until they are cooled and the juice has seeped out.
Strain the berries into another large bowl through a nylon sieve, stirring them gently to release all their juice but taking care to retain and discard all the fibres.
Stir in the sugar into the raspberries juice and cook on high for 7 minutes, stirring after each minute of cooking time until the mixture has boiled but not caramelized.
Combine the lemon juice and pour raspberry syrup into the bottles. Seal well and keep in the refrigerator until served.
Serve diluted with soda water or with dry white wine or undiluted over any dessert or icecream.
You can easily use strawberries or any other types of soft fruit instead of the raspberries in this healthier drink recipe.
