This classic Ratatouille Recipe is a beautiful combination of colorful and healthy vegetables that are easily available during the summer or chilly autumnal weather seasons. This veggie dish has been a French favorite for years. You must try this budget-friendly dish by yourself.

1.5kg aubergine

1.5kg courgette

2 large red peppers

2 large yellow peppers

3 large onions

3 garlic cloves

1kg beefsteak tomatoes

125ml tomato juice

Salt and pepper

125ml dry white wine

250ml olive oil

2 bay leaves

Rosemary sprigs

Thyme sprigs

3 parsley sprigs

Slice the onions and crush the garlic cloves with the back of the knife. Blanch the tomatoes in boiling water. Peel and chop and remove the hard yellow cores.

Heat 4 tbsp of the oil in a large heavy pan. Fry the onions until transparent, then add the tomatoes and garlic cloves. Pour in the tomato juice and half the white wine. Add the green herbs, salt and pepper, and stew over a low heat for 10 minutes.

Meanwhile halve, core and de-seed the peppers. Slice into strips.

Wash the aubergines and courgettes, then slice thickly. Heat another 4 tbsp of olive oil in a saucepan. Cook these vegetables over a high heat, stirring from time to time, until golden.

Heat the oven to 190° C.

Heat the remaining oil in another saucepan and brown the sliced peppers.

Put all the vegetables in the saucepan with the onion and tomato mixture. Add the remaining wine and cover the pan.

Place in the center of the oven and stew for 2 hours.

Remove the vegetables using a slotted spoon. Drain briefly (the vegetables should still be soaked in olive oil) and place in a serving dish.

This Ratatouille or veggie dish tastes even better the following day, whether served hot or cold.

Serve with fresh French bread.
