Cooked green lentil combined with other spices and baked in an oven or deep fried make a great addition to any meal. Lentil spring rolls are the finest addition as an appetizer and to make the party great. They are easy to make and have healthier ingredients those are full of vitamins and protein rich. Add a new twist to your party next time by adding these spring rolls.

Ingredients:
Red Lentil in Rice Paper
200g split red lentils
4 sheets rice paper
1 tsp turmeric
1 red onion, finely chopped
2 garlic cloves
1 green chili
50g fresh ginger root
2 tbsp oil
250ml stock (chicken, beef or vegetable)
2 tbsp sherry vinegar
2 tbsp soy sauce
A pinch cumin powder
Salt and pepper
100g yogurt
1 egg yolk
Oil for the dish
Preparation Method:
Red Lentil in Rice Paper
Cook the lentils with turmeric in a generous amount of water until tender. Drain thoroughly in a sieve.
Soak the sheets of rice paper in cold water until they turn milky white. Remove carefully and spread them out next to one another on a tea towel.
Peel the ginger and garlic. Core and de-seed the chili. Dice all three finely.
Heat the oil in a flameproof casserole and lightly brown the ginger, garlic, and chili. Add the lentils and pour in the stock, vinegar and soy sauce.
Add salt, pepper and a pinch of cumin. Cook over an average heat until almost all the fluid has evaporated then take away from heat and stir in the yogurt.
Heat the oven to 200° C.
Spread the lentil mixture on the rice paper. Fold the side edges over the filling then fold lengthways. Butter a baking sheet and put the parcels on it. Brush with beaten egg yolk and bake in the center of the oven for 10 minutes or until golden.
