Ingredients:

Lean Beef pieces, 1.5 kg

Apple, cored and grated, 1

Fresh bread crumbs, 40 g

Chopped hazelnuts, 2 tbsp

Dijon mustard, 1 tbsp

Fresh chives, 1 tbsp

Salt, to taste

Black pepper, to taste

 

Preparation Method:

Cut the fat from the beef leaving a thin layer of fat.

Preheat the oven 220° C. Place the meat on a rack in a roasting time, cover with aluminum foil and roast for 1 hour then reduce the oven temperature to 180° C.

Mix together the apple, bread-crumbs, nuts, chives, mustard, and seasoning. Remove the foil and spread the breadcrumb mixture over the surface of the meat.

Cook the beef for 45-60 minutes or until the meat juices run clear.

Serve roast beef in slices with a rich gravy and green salad.
