Roasted Aubergine Dip | Roasted Eggplant Dip

Despite of great health benefits, most of the people do not like to cook Aubergine. Here is an easy to cook Roasted Aubergine Dip recipe that is amazing in taste and will never let your family members to be aware of the eggplants.

 

Ingredients: Roasted Aubergine Dip | Roasted Eggplant Dip

 

  • Aubergine – one medium size
  • Olive oil – 120 ml
  • Lemon – 1
  • Peeled and crushed garlic – one clove
  • Black pepper
  • Salt
  • Parsley, finely chopped to garnish

 

 

Preparation Method: Roasted Aubergine Dip | Roasted Eggplant Dip

 

Use preheated (200C) oven in order to roast the Aubergine.

 

Take a baking sheet and place the Aubergine over it

 

It will take almost 35 minutes till the Aubergine gets tender.

 

Let it cool and then put off the outer skin.

 

Add lemon juice, garlic, coriander and Aubergine flesh in food processor to mix the constituents.

 

Add olive oil in the mixture when the food processor is working.

 

Keep on blending the mixture till it gets smooth. Garnish with parsley.

 

Roasted Aubergine Dip or Roasted Eggplant Dip is ready to serve.
