½ lb medium to large shrimps, deveined and peeled

3 tbsp of butter, melted

½ tbsp ginger, grated

2 tsp fresh lime juice

1 tbsp fresh orange juice

Salt to taste

¼ tsp ground black pepper

1 tbsp sesame seeds, toasted

1/3 cup red jelly (strawberry or other)

1 tsp raspberry vinegar

¼ tsp hot pepper sauce

1 small avocado, sliced and peeled

Preheat your oven to 425 degrees F. Slice the shrimps in between using a small knife and very gently spread and flatten them. In another pan melt the 2 tbsp butter and stir in ginger, salt, pepper and citrus juices.dip every shrimp in the butter sauce and place the slit side up on the oven sheet. Bake for about 5 minutes or until the shrimps turn pink.

In another pan meanwhile, put the remaining tbsp of butter, vinegar, hot pepper sauce, and jelly. On medium heat frequently stirring heat the mixture until the jelly dissolves completely. If desired strain the mixture.

On slices of avocados, arrange the shrimps in heart shapes and sprinkle sesame seeds on top, drizzle the sauce on top and serve.

Ingredients: Baked Dijon Salmon Recipe

1/8 cup melted butter

1 ½ tbsp Dijon mustard

¾ tbsp of honey

1/8 cup bread crumbs dried

1/8 cup pecans, finely chopped

2 tsp parsley, fresh and chopped

2 piece (2oz) salmon fillet

Pepper and salt to taste

1 lemon for garnishing

Preheat oven to 400 degrees F (200 degrees C). In a bowl mix well mustard, butter, and honey and set aside. In another small bowl mix the bread crumbs, parsley, and pecans.

Brush the fillets with the butter mixture and on top sprinkle the breadcrumb mixture

Bake the salmon fillet for 12 to 15 minutes or until it is done and flakes with a fork. Season with pepper and salt and garnish with a lemon wedge before serving.

1 cup marsala

1 cinnamon stick

½ cup castor sugar

½ split vanilla bean

1/6 cup mascarpone

2 triumph pears (peeled)

1 tablespoon flaked and roasted almonds

Marsala and Cinnamon Poached Pears

In a saucepan mix marsala, cinnamon, sugar, vanilla bean, and cold water 2 cups and cook over medium heat. Stir until sugar dissolves and add pears to the pan. Cover and bring to boil over medium-high heat. Once boiling lower heat to low and simmer for at least 30 minutes or until pears are tender, turning them halfway through cooking.

Transfer pears to a heatproof dish and boil the syrup for 15 minutes until slightly thickened. Pour over the pears and let stand for 30 minutes to cool. Serve with mascarpone cheese and almonds on top.
