Savoy cabbage is another major type of cabbage, in addition to the green and red varieties. It comes from the northern Mediterranean area and was cooked as long ago as the Middle Ages.

Savoy cabbage is not as tightly closed as red and green cabbage types. Its leaves are wrinkled and curly. It comes in many types and colors from dark green to yellow. Dark green Savoy cabbage contains more valuable nutrients than white cabbage and it also easier to digest.
