Ingredients:

Low-fat natural yogurt, 1 ¼ cups

Garlic clove, crushed, ½

Saffron powder, a pinch

Fresh mint, chopped, 2 tbsp

Clear honey 2 tbsp

Oil, 3 tbsp

Lean lamb neck fillets, 700 g

Aubergine, 1

Red onion, 2

Salt, to taste

Black pepper, to taste

Small mint leaves, to garnish

Hot pita bread and lettuce, to serve

 

Preparation Method:

In a shallow dish, mix yogurt, saffron, garlic, honey, mint, oil, and black pepper.

Trim the lamb and into small cubes. Add to the marinated mixture and stir until well coated. Leave to marinate for at least 4 hours.

Cut the aubergine into small cubes and blanch in boiling salted water for  2 minutes then drain well.

Preheat the grill. Remove the lamb cubes from the marinade. Thread the lamb, aubergine and onion pieces alternately on the skewers.

Grill for about 10-12 minutes, turning and basting occasionally with the marinade until the lamb is tender.

Serve the skewer on a bed of lettuce, garnished with mint leaves and accompanied by hot pita bread.

If you are using bamboo skewers, soak them in cold water before use, to prevent them from burning. All lean, not too thick cuts of meat such as lamb or chicken grill very well on a barbecue. Meat should be marinated beforehand and left overnight if at all possible.
