Ingredients:

Small Corn Quiches Recipe

Can Sweetcorn (drained), 200 grams

Shortcrust pastry, 150 grams

Boneless chicken (½ strips), 100 grams

Egg, 1

Milk, 75 ml

Salt, to taste

Black pepper, to taste

Fresh parsley (chopped), 1 tablespoon

 

Preparation Method:

Heat the oven to 190C.

Roll out the pastry on a lightly floured surface to a circle 5 mm inch thick. Cut into rounds with a 7.5 cm (3 inches) Roll out the trimmings to make 12 rounds in total. Press the rounds lightly into 12 patty tins, then refrigerate while making the filling.

Put the chicken into a nonstick frying pan and fry over moderate heat for 3-5 minutes. Drain on absorbent paper.

Mix the chicken with the drained sweetcorn and spoon into the prepared pastry cases.

Beat the egg with the milk and season with salt and pepper to taste, then stir in the parsley.  Carefully use the spoon over the sweetcorn mixture.

Bake in oven for 20-25 minutes until the pastry is golden and the filling firm.

You can serve Small Corn Quiches hot or cold.
