2 kg whole snapper

Seasoning

60g butter

2 garlic cloves, crushed

1 tbsp ground coriander

2 tsp mustard powder

2 tsp mild curry powder

1 tbsp ground cumin

2 tsp sweet paprika

2 cups cooked long grain rice

½ cup pistachios, toasted

2 tsp finely grated lemon rind

2 tbsp fresh coriander leaves, chopped

 

Preparation Method:

Score fish three times on each side.

Fill hollow space of fish with seasoning; wrap in lightly oiled foil.

Place fish on the heated oiled barbecue; cook covered, Using indirect heat, for about 1 hour or until cook through.

 

SEASONING

Melt butter in medium frying pan; add garlic and onion, cook until onion becomes soft. Add spices; cook, stirring, until fragrant. Combine ready mixture, rice nuts, herbs and lemon rind in a large bowl.
